The business started on an Organic smallholding on the slopes of Monte Amiata, in Southern Tuscany. Bottling their first Olive oil in 1994, founders Peri Eagleton and David Harrison began their quest to source artisan producers, like them, who believed in sustainability, minimal processing, traceability and provenance.

A naturally dense and deliciously figgy balsamic vinegar glaze, made without thickeners or colouring. This fine balsamic glaze enhances flavour and presentation of dishes.
